Bored and Baking


It's a cold, overcast day here in London. The sky is one flat shade of greyish white. It's suffocating. Solution? Hit the kitchen and bake up something delicious. I truly am my mother's daughter.

Today's delight: No Flour, No Butter, Better Peanut Butter Cookies. (I didn't come up with the name, I'm just not that clever.) I knew I wanted to do peanut butter cookies because I had planned to about a week ago so I had 2 jars of "crappy" peanut butter that I think is only suitable for baking. I was going to whip up a batch of Mom's "Chewy Peanut Butter Cookies" before I realised that I'd used the last of the butter on last night's dinner of culinary perfection: Kraft Mac 'n' Cheese. Humph.

Thank Jesus for the internet! Stumbled upon this recipe from another blog. As luck would have it, I had all of the ingredients so I went to town. This recipe was super easy and didn't require beaters (and didn't kill my arm in the mixing process either). I mixed all of the ingredients at once in the same bowl and they baked up in 10 minutes flat. The result was something warm and somewhat flakey, chewy but not as chewy as I had expected, peanut buttery but not over the top. As a lover of all things peanut butter, I think these hit the spot perfectly. I'll give them 4 out of 5 stars.
