Bored and Baking Pt. 2
Another day, another batch of cookies. I don't know what is compelling me to do all of this baking, but I'm willing to bet it's got something to do with boredom and loneliness. This morning I woke up craving chocolate. I looked for recipes for butter-less brownies, but I didn't have cocoa or chocolate, so that was out. I fell back on good ol' chocolate chip cookies.
Again, I turned to the wonderful interweb to provide me with a recipe. I found one on another woman's blog, and it seemed legit so I tried it. It called for vegetable oil, but I didn't have that so I substituted EVOO. I bought chocolate chips at the Co-op a few weeks ago (back when I still had money) and rediscovered them today. It was the perfect amount for a half batch of these delicious butter-less chocolate chip cookies. Again, no beaters but I got a good workout mixing this thick batter by hand. The cookies turned out chewy and soft, with a nice crispy exterior. I'm glad I only made a half batch, though because the recipe yields loads of cookies and I'm just one person! I can't possibly be expected to eat all of these by myself (or can I?). I'm off to share these, and the peanut butter ones from yesterday, with Pepijn. After all, friends are perfect for helping devour a batch of cookies. It's 2:30, I think this means cookies will be my lunch today. What's wrong with that?
